Yes Howard, it is kind of a taste as you go kind of recipe too. . .you add more of what you like and less of what you do. Soups are SOOOOO easy to make.

Any good recipes for easy to make enchiladas, I understand that Selma makes killer enchiladas?

Killerness of enchiladas often depends on the leftovers being rolled up in the torts. It can go from merely pretty doggone good to, yes, killer. Also depends on how hungry the crowd is.

The filling is some kind of meat or poultry or even fish, chopped up reasonably small. Add cheese, other seasonings to taste (I suggest chopped onions and cilantro), chopped/sliced/whole black olives. Then dump in enough enchilada sauce to make it nice and sticky.

The tortillas are pretty easy. Use fresh corn ones. Warm them up (traditionalists fry briefly in lard. I use a microwave or a dry griddle.) Dip each one in a hot bath of enchilada sauce, remove to a plate. When you have a stack of six or so dipped, invert the stack to get to the softest one first, add a handfull of filling, roll, and transfer to the baking dish. Continue until you run out of tortillas, sauce, or filling.

More enchilada sauce goes across the top of the baking dish (unless you ran out of it first), then more cheese and olives. Bake until the whole thing looks done to you, remove from oven, cover any ugly spots with some sour cream or guacamole, sprinkle on some more cilantro and sliced green onions, and serve.

This works well with beans, corn, spanish rice, and a green salad if it's an actual dinner with company.

I must apologize for the tediously specific measurements and ingredients. That's really how I cook. Stuff gets flung at a pan and stirred, seasonings get added to smell, "some" or "a little" are actual measurements, and "until it's done" is the usual cooking time.

The only difficult part is finding an enchilada sauce that suits you. I like Las Palmas.

If you want green enchiladas, use a tomatillo salsa mixed with chicken broth, and thickened with some corn starch. Bring to a boil until it's nicely thickened, remove from heat, and add sour cream (again, until it looks right).

You can do this. Anybody can do this. Make sure the dishwasher has room for the messy stuff before you start, and all the pans can wash while the enchiladas are baking.

ooooow Howard, i really miss the east coast now!!

we used to go to out to White Castle for sliders and chikin rings after we left the bar at 2am. ahhh, the good ol' days. :D

i miss all the corner delis and good hole in the wall diners from NJ. what i wouldn't give for a Sabrett with kraut or a taylor, egg & cheese on a roll.

now i'm stuck in CO where the men are men and the sheep are scared! :eek: ... or is that Wyoming?

They just opened a new White Castle a few blocks from me. Haven't gone there yet. I remember many Saturday nights with a good buddy of mine making Belly Bomber runs across the street from our local hang out. Yes! The Good Old Days :-)

I agree the best Hot Dogs are from the Sabrett vendor stands in the city parks. Put everything on the dog including Onions.

I used to make many business trips to Denver and there is a great steak place. Forgot the name of it but it was the best steak I ever had!

Howard, i envy you. i wish i had a WC around here. they have the frozen ones at the food store - YUK - just not the same.

Saxy, what is it about cake you can't have? i have a great receipe for flourless/eggless cake you might enjoy.

sushi is truly one of my favorite things. very good prana!!! i need to get off this thread. i'm starving... and lunch is only consisting of physical therapy today and aminal crakers to snak on during the afternoon. :(

I have never bought the frozen variety of WC.
Just like Ice Cream. Low Fat, Fat Free, blah blah blah, Go for the real thing and enjoy.

Sorry to hear they don't have WC out there.

It took years for taco bell to get into the NY area.

lioness, right now I can ONLY have meats, certain veggies, water, plain yogurt, and eggs.

tendon damage in my left arm/wrist. pretty crappy for a guitar player, huh?
i started going Aug 04 and i have GRRRREATLY improved. i can now play for 45 mintues without pain! :D (used to only be 5).

i still push it sometimes. like when i'm in the middle of writing some real good stuff at 3am or jammin' out at a bar.

yeah, i can see where that would constitute a really big "SUCK". at least it's only temporary.

ok, not sure how brave you are but try switchin’ up your meats to avoid the mundane variety. rattlesnake(makes a good sausage), gator(prepare like calamari), elk(great in a stew), buffalo. and my personal favorite... caribou.

LOL. What's even suckier is that Elk is hard to find around here. . .gator is not that hard, but it's actually not on our diet. I've had duck, it's a bit stringy. Cornish hens aren't bad. The bad thing is that our spices are limited too, and no condiments. . .so things are fairly bland.

The soup that I made up at the top is the exception.

Ohhh, we can have jalapeno though, so maybe I'll experiment a bit with that. . .
