Does anyone know what happened to the Musical Notes thread. When I go into it, I get all old topics.

High Altitude Baking: Wow! that's a useful page. I was just going to suggest finding a copy of Colorado Cache at the bookstore. I think it's the Denver Junior League that produces it, my sister sent me a copy, but the recipes for the baked items that work so well at her house fail at mine. The difference? She's at 5000+ feet, and I'm at 152 feet.

not sure if that really constitutes high altitude, though mental & spiritual states may not count ;)

i have picked up a number of different books - even ones directly for colorado living. i think they are more for places 6k and over. in denver we are only 5200 so it's that pain in the arse in-between stage where sea level cooking doesn't work and high altitude doesn't either.

i printed out a bunch of stuff from the site GC linked and will do some study on that.

"High Altitude" is any locale over 3000 feet. Denver counts, honest. So does Albuquerque.

My biggest complaint is that a 3-minute egg takes four minutes. :(

i have also never been able to make a perfect poached egg since i've lived in CO. i miss that. i'll get it right one of these days! ;)

In my house, blueberry waffles or pancakes are a summer food, to be made with fresh berries. One glorious way of celebrating August and September.

The high-altitude pancakes get very light and fluffy, with a crispy outside. They rise to about an inch thick in the pan as they cook. Of course, I've only cooked em outdoors at that altitude.
Add a little Grand Marnier to the warm syrup, and who says backpacking food tastes like cardboard?

OK, so I'll check Keils for fresh berries. Even if it is February, there ought to be some fresh ripe berries - this is, after all, Paradise. ;)

Gosh, it's only 6:30AM EST and you all have me hungry. All I can think about right now are Belgian Waffles with tons of Whipped Cream and fresh strawberries on top.

Good news! I was able to add American, Colby, and Monterrey Jack (slowly, not all at once)!
I can also make use of corn tortillas, corn starch, etc yay!
Slowly I will add in honeydew melon and watermelon. .

I'm so excited!

Waffles did not happen. DH had gone hunting at Costco, and captured a rotisserie chicken and a Greek salad. All hail the mighty hunter! :)

Waffles deferred for a day or two, until the chicken has been finished. It's still going to happen, on account of somebody's mention of Estes Park Pancakes.

Got a Mesquite Chicken sandwich there last night on my way in for my overnight. It's still repeating on me. I think that's my last trip there.

May I favorably mention the Papa John's Barbecue Chicken Pizza. And the garlic-butter dipping sauce. This, even if it repeats, you probably won't regret.
