I can only recall three jobs I've had where it wasn't, and two of them were federal government jobs. It's quite common to get both Thursday and Friday off, but it's clearly not universal.

My gummint job is declaring both Thursday and Friday days-off, but only Thursday is a paid holiday. We get charged vacation time for our Friday. Doesn't matter to me, I'd've planned it off anyway even if they hadn't planned it for me.

The place is doing the same thing for the week between Christmas and New Year's - buldings will be shut, lights will be off, nobody will be here.

The cats greatly enjoyed the meat off those turkey necks - I wanted the liquid I boiled them in. Stuffing and gravy improve immeasureably if you have some actual turkey stock to work with.

Agree Selma. I usually boil the neck(s) in Chix broth with the giblets, liver, heart as well as any trimmings from the bird (such as that gross tail thing that I always cut off. I add celery and some onion to the boil. The broth is very rich afterward and as you say makes a nice gravy. It also makes a nice soup stock

At the moment, I'm in very good shape for turkey stock. There was leftover neck stock, and yesterday I stripped the meat off the carcass, broke it up, and put it in my stockpot with the usual mirepoix, bayleaf, thyme, rosemary, garlic. After several hours I again throw away the solids, save the juice.

Today the all the juice got boiled down thick and poured into ice cube trays. I'm in very decent shape for a Christmas bird. :smug:

Cat, you can have stuffing any time you want it. I use the grocery store breadcrumb stuffing mix and add a ridiculous amount of poultry seasoning and a little extra sage to 3 cups of crumbs. Then, in the fry pan you put half a stick of butter and half an onion, minced, about half a cup of celery, minced, half a cup of carrot, minced, two cloves of garlic, smashed and minced. Cook gently until the carrot bits are soft and add a cup-and-a-quarter of the liquid of your choice (I used turkey stock ) bring it to a boil, dump in the crumb-seasoning mixture and stir, turn off the fire and put on the lid. Wait five minutes, remove lid, fluff, and eat.

Yes, that sounds like the stovetop stuffing method. They stole it. Difference is, you know what went into your stuffing and you get some real vegetables.

I dont much care if I eat turkey or not, but I love stuffing and gravy.
Perhaps we shall have that next week, since the big holiday was celebrated deliciously with steak one day and meatloaf the next.

Young man named John received a parrot as a gift. The parrot had a bad attitude and an even worse vocabulary. Every word out of the bird's mouth was rude, obnoxious and laced with profanity. John tried and tried to change the bird's attitude by consistently saying only polite words, playing soft music and anything else he could think of to "clean up" the bird's vocabulary. Finally, John was fed up and he yelled at the parrot. The parrot yelled back. Jon shook the parrot and the parrot got angrier and ever ruder. John, in desperation, threw up his hand, grabbed the bird and put him in the freezer. For a few minutes the parrot squawked and kicked and screamed. Then suddenly there was total quiet. Not a peep was heard for over a minute. Fearing that he'd hurt the parrot, John quickly opened the door to the freezer. The parrot calmly stepped out onto John's outstretched arms and said,

"I believe I may have offended you with my rude language and actions. I'm sincerely remorseful for my inappropriate transgressions and I fully intend to do everything I can to correct my rude and unforgivable behavior."

John was stunned at the change in the bird's attitude. As he was about to ask the parrot what had made such a dramatic change in his behavior, the bird continued,

" May I ask what the turkey did?"

Summer sausage, cheese, ham, mustard (selection of 4), pastel mints, mini-chocolates, candied pecans and almonds, a beautiful fruit-arrangement and chocolate covered strawberries. The ham and honeydew went especially well together.

Followed by spaghetti with meatballs, lasagna, steamed sugarsnap peas, garlic bread and eventually chocolate mousse cake.

An excellent meal. And the parrot went free.
PS - GC told this joke over ribs and its even funnier when he does the delivery in person. Excellent racoteurage.

There was a green bean casserole. Made with canned green beans. No, I did not make any derogatory comments and yes, I did eat some.

It's ever so much better with fresh (or even frozen) beans and real mushrooms.
