When I was a kid, we had three Russian Geese as pets. Had a little corner of the stables. They were pretty neat. Followed us kids when we went exploring/hiking.

When the Canada brand flew over at the onset of winter, our fat little friends tried SOOO hard to lift off and go along that it made my heart break. I believe they finally did. Either that or the reservation locals ate them... mmmm tastes like extra greasy chicken.

Well, a whale or dolphin would be cool... they get a lot more real estate!

Every morning I get that Wagging Tail and warm greeting from the pooch! Can't beat that!
Mango Lassi is made with Yougart and Mango Pulp, mixed in a blender. It is such a good compliment to the hot/spicy dishes. If you're game, you can put a shot of rum in the drink and make it interesting.
Chicken and Mango Chutney.. Sounds good.

There is also a dish called Chicken Korma.
It is chicken in a creamy cashew nut sauce. Not hot or spicy. Just delicious!

Here it is!:

Broiled Chicken with Mango-Avocado Chutney
Combining mango chutney with fresh mango and avocado makes a deliciously silky and complex accompaniment for the broiled chicken.


Chutney:
3 tablespoons prepared mango chutney (finely chop any large pieces)
2 tablespoons fresh lime juice
1 small fresh red chili pepper, seeded and minced
1 scallion, thinly sliced
1/4 teaspoon salt
2 mangoes, diced
Half a medium avocado, diced
1/4 cup chopped cilantro

Chicken:
4 skinless, boneless chicken breast halves (1 pound total), lightly pounded
Grated zest of 1 lime
1/4 teaspoon salt
1/8 teaspoon crushed red pepper flakes
1 teaspoon olive oil

1. To make the chutney: In a medium bowl, mix prepared chutney, lime juice, chili pepper, scallion, and salt. Fold in mangoes, avocado, and cilantro. Cover and set aside.

2. To cook the chicken: Preheat broiler. Spray broiler pan rack with nonstick cooking spray. Season chicken on both sides with lime zest, salt, and red pepper flakes. Place on prepared broiler pan and drizzle with oil.

3. Broil 4 to 5 inches from the heat for about six minutes, turning once, until the chicken is cooked through. Serve with the mango-avocado chutney.

TM, that is my favorite. i always order one when i go for Indian food. never tried the rum though. good idea!
