You aren't familiar with the breed because bouv people like it that way. Not because we're snobby, but because we're protective of something very special. The last thing we want is for bouvs to become puppymill/pet store dogs. This is the breed's national homepage:

Go to Amazon and look up "Your Purebred Puppy: A Buyer's Guide" by Michele Welton. Everything you wanted to know about every breed recognized by the AKC. Then, for the fun of it, read this article:
